Prepare a loaf baking dish by lining with olive oil and preheat the oven to 350 degrees.

½ cup soft butter (unsalted)
2 large eggs
1 cup of sour cream
2 cups almond flour
1/8 cup coconut flour
4 teaspoons water
3 teaspoons apple cider vinegar
1 ½ cups flax seed meal (ground)
½ cup collagen
3-4 teaspoons baking powder 2 teaspoons baking soda
2 teaspoons cream of tartar
2 teaspoons xanthan gum Dash of salt
In a large bowl, mix the eggs, sour cream, water, and apple cider vinegar and whisk for several minutes. Set aside and add the following ingredients to a second bowl: almond flour, flaxseed meal, coconut flour, collagen powder, baking powder, baking soda, cream of tartar, salt, and xanthan gum. Blend thoroughly and avoid lumps, making sure all ingredients are combined evenly. Add the soft butter and mix with your hands evenly into a crumbly dough. Add the other wet ingredients (with the eggs) and continue to mix into a dough.
Preheat the oven to 425 degrees and line a baking tray with parchment paper. Lightly dust the parchment paper with almond or coconut flour evenly. Spread the dough onto another surface, also lightly dusted with flour, and cut into small, circular pieces. Bake in the oven for 18-20 minutes until golden brown. Cool before serving. These biscuits will last in the refrigerator for 3-4 days. They can also be frozen for later use.
